This lot from La Esperanza reflects the character of Nariño’s high-altitude landscapes, where cooler temperatures and volcanic soils slow down cherry development and deepen complexity. Grown by Ximena Cifuentes in Buesaco, between 2100 and 2400 masl, the coffee benefits from a stable microclimate shaped by mountain air currents and consistent humidity near the Meneses stream.

Processing follows a traditional washed approach, guided by experience rather than strict timelines. After careful cherry selection and flotation, the coffee undergoes open-tank fermentation, with daily mixing to ensure even development. This method, combined with the region’s moderate temperatures, allows for extended fermentation that builds clarity and structure without pushing intensity. The beans are then washed and slowly sun-dried over 8 to 15 days, preserving balance and sweetness.

In the cup, the profile opens with a subtle oolong clarity, followed by the comforting sweetness of baked apple and caramel. A soft nutty base and a gentle rooibos-like finish bring warmth and structure, creating a cup that feels both layered and composed. The acidity is fruity but controlled, supported by a soft, rounded body.
