Produced by Wilton Benitez at Granja Paraíso 92 in Cauca, Colombia, this Orange Bourbon grows between 1,900 and 2,100 metres above sea level, where cool temperatures and slow cherry maturation help build remarkable sweetness and complexity before harvest even begins.

From there, Wilton does what Wilton does best.

After meticulous cherry selection, the coffee undergoes a carefully controlled two-stage fermentation using selected microorganisms before his signature thermal shock process locks in the aromatics developed during fermentation. A slow, low-temperature drying stage preserves those delicate flavours all the way through to the final cup.

The result is a coffee that's vibrant, expressive, and incredibly clean. It reminds us of orange sherbet, ripe peach, and vanilla, with soft pink florals tying everything together. The citrus is bright without being sharp, the sweetness lingers, and every sip seems to reveal something new as the coffee cools.
